MAME? RetroPie; RetroArch?! OpenEmu... helpppp!

Ok, not so much a help question but...
I started out on Raspberry Pi's and RetroPie. Its really a great system, and the hardware is so cheap theres really no question to its value. I have a Raspberry Pi 4 and it can play all the systems I love thru N64 (Most/a good portion of games), Dreamcast and Naomi2.
Recently, however, I've been getting into MAME - IMO, aside from the retro home console systems that you love and WANT to have, MAME/Arcade games are so much nicer to play - especially if you buy/build an arcade machine. Stand-Up, sitdown, or just using a television and a decent joystick...
I am interested in building a two player joystick and possibly a stand for it, to sit underneath my wall mount TV when I really want to play. My coffee table is made of a sewer cover, and is rock solid and heavy - so I think that a two-player large joystick would still sit on it just right. :P The MAME games are awesome; theres nothing that hasn't played ALMOST good enough of my ThinkPad T430s (early i7, 16GB ram, but still pretty old...) - but I haven't tested ALL the MAME stuff I like on my Raspberry Pi yet. Guess I better get on that.
Then I know, when people use CURRENT hardware, that people like to use RetroArch with BigBox or.. I think theres another front-end software thats really popular.
ANYWAY; I really am liking the Arcade Games.. I still want my NES/SNES/Sega/Atari stuff too- it doesn't really take up too much space... I have a good collection of x68000 Japan Retro PC software that I must have, and I might want to emulate Amiga games and some Apple software too. For ME, I THINK RetroPie and a Raspberry Pi 4 is a great solution - but don't know how well it plays the later arcade games that I like (DoDanPachi!! and other later LOTS GOING ON ON SCREEN flying games. :P)...
If I do switch to some x86 solution, do you have any suggestions of what to run? I prefer Linux, but yes... I would install Windows if it meant the best solution.
And, what do you enjoy with emulation? How to you consume/play it? Are you into MAME?
The system that I have thats already 'built' is a Raspberry Pi 4 in a PiBoy DMG Gameboy style case/hardware. Its great. Play in a GB form-factor, or just plug into a big TV for console-like gameplay: It is awesome. But I'm ready to build a two-player ARCADE JOYSTICK now, and don't know what I'll run on it.
