Title: Spinach Surprise

Yield: 4 Servings

2 c Cooked rice or cracked wheat
3/4 c Cheese; grated
2 Eggs
2 tb Parsley; chopped
1/2 ts Salt
1 lb Spinach
2 Onions; chopped
2 tb Wheat germ
1/2 c Walnuts; chopped; (that's
-the surprise!)

Saute onions and walnuts in oil. Add cooked grain, cheese, and eggs.
Stir in raw spinach. Top with wheat germ.
