    Title: Smoke & Spice Refried Beans
    Categories: Beans
    Yield: 4 Servings

    1 tb Olive oil
    1 sm Onion; minced
    1 tb Ground cumin; or to taste
    1/2 ts Smoked paprika
    3 c Cooked pinto beans -OR-
    30 oz Beans (2 cans);
    - rinsed & drained
    1 Chipotle chile in adobo;
    - up to 2, finely minced
    Salt
    Black pepper; freshly ground

    Heat the oil in a large skillet over medium heat. Add the onion,
    cover, and cook until softened, about 5 minutes. Add the cumin and
    paprika and stir to coat the onion. Add the beans, chipotle chiles,
    and salt & pepper to taste. Coarsely mash the beans, stirring to
    incorporate the other ingredients. Cook until heated through, about
    10 minutes. Add a small amount of water if the mixture becomes too
    thick. Taste and adjust the seasonings, if needed. Serve hot.
