    Title: Cheesy Ham & Potato Soup
    Categories: Potatoes, Pork, Cheese, Dairy, Vegetables
    Yield: 7 servings

    2 c Diced, peeled potatoes
    2 c Water
    1/2 c Sliced carrot
    1/4 c Chopped onion
    1/4 c Butter; in cubes
    1/4 c A-P flour
    2 c Milk
    1/2 ts Salt
    1/4 ts Pepper
    2 c Shredded Cheddar cheese
    1 1/2 c Diced fully cooked ham
    1 c Frozen peas

    In a large saucepan, combine the potatoes, water, carrot
    and onion. Bring to a boil. Reduce heat; cover and cook
    until tender, 10-15 minutes.

    Meanwhile, in another saucepan, melt butter. Stir in
    flour until smooth. Gradually stir in milk; add salt and
    pepper. Bring to a boil; cook and stir until thickened,
    about 2 minutes. Stir in cheese until melted. Stir into
    undrained potato mixture. Add ham and peas; heat
    through.

    Title: Apple-Stuffed Pork Chops
    Categories: Pork, Fruitsd, Vegetables, Herbs, Bre4ads
    Yield: 6 servings

    1 tb Chopped onion
    1/4 c Butter
    3 c Soft bread cubes
    2 c Fine chopped apples
    1/4 c Fine chopped celery
    2 ts Minced fresh parsley
    3/4 ts Salt; divided
    6 Bone-in pork loin chops
    - (1-1/2" thick/7 oz ea)
    1/8 ts Pepper
    1 tb Oil

    In a small skillet, saute onion in butter until tender.
    Remove from heat; add the bread cubes, apples, celery,
    parsley and 1/4 teaspoon salt.

    Cut a pocket in each chop by making a horizontal cut
    through meat almost to the bone. Sprinkle inside and
    outside with pepper and remaining salt. Spoon stuffing
    loosely into pockets.

    In a large skillet, brown chops on both sides in oil.
    Place in an ungreased large baking pan. Cover and bake @
    350ºF/175ºC for 30 minutes. Uncover; bake 30 minutes
    longer or until a thermometer reads 145°. Let meat stand
    for 5 minutes before serving.
