Title: Carrot Banana Bread

Yield: 16 servings
2 c A-P flour
1 c Sugar
1 ts Baking soda
1/2 ts Salt
1/2 ts Ground cinnamon
2 lg Eggs; room temp
1 c Mashed ripe bananas
1/3 c Oil
1 c Grated carrots
1/2 c Chopped pecans
Set oven @ 350ºF/175ºC.
In a large bowl, combine flour, sugar, baking soda, salt
and cinnamon. In a small bowl, whisk eggs, bananas and
oil. Stir into dry ingredients just until moistened.
Fold in carrots and pecans. Transfer to a greased 9" X
5" loaf pan.
Bake until a toothpick inserted in the center comes out
clean, 55-65 minutes. Cool for 10 minutes before
removing from pan to a wire rack to cool completely.
