1 c Water; warm
4 Eggs; room temperature
1 ts Salt
1 tb Oil
2 tb Honey

1/2 c Water; (110°F)
2 tb Yeast
1 tb Honey

6 c Flour

1 ts Salt
1 ts Honey
Mix Part One ingredients together. Mix Part Two ingredients together.
Combine the two mixtures together.
Add 2 cups flour at a time until moist.
Knead for 15 to 20 minutes.
Let rise 1 hour and 15 minutes.
Punch down and knead for 2 minutes.
Roll into log and divide into a dozen 1-1/2" thick pieces. Make
center hole using thumb.
Let rise 15 to 20 minutes.
Set on lightly dusted cookie sheets.
Pre-heat oven to broil. Broil dough 1-1/2 minutes on each side to a
light golden brown.
In a pot, boil water 4" deep with 1 ts salt and 1 ts honey. Put
bagels in boiling watger for 4 minutes, turning occasionally. Remove.
Put bagels on lightly oiled (but not too wet) cookie sheets.
Bake at 350°F for 15 to 20 minutes until brown.
Bagels will be hollow sounding when tapped.
Let cool for 30 to 60 minutes.
