    Title: Potluck Taco Casserole

    Yield: 8 servings

    2 lb Ground beef
    2 oz (2 env) taco seasoning
    4 lg Eggs
    3/4 c Milk
    1 1/4 c Biscuit/baking mix
    ds Pepper
    1/2 c Sour cream
    3 c Chopped lettuce
    3/4 c Chopped tomato
    1/4 c Chopped green pepper
    2 Green onions; chopped
    2 c Shredded Cheddar cheese

    Set oven @ 400ºF/205ºC.

    In a large skillet, cook beef over medium heat 10-12
    minutes or until no longer pink, breaking into crumbles;
    drain. Add taco seasoning and prepare according to
    package directions. Spoon meat into a greased 13x9-in.
    baking dish.

    In a large bowl, beat eggs and milk. Stir in biscuit mix
    and pepper. Pour over meat. Bake, uncovered, 20-25
    minutes or until golden brown. Cool 5-10 minutes.

    Spread sour cream over top; sprinkle with lettuce,
    tomato, green pepper, onions and cheese.

    Title: Bacon & Egg Casserole
    Categories: Pork, Cheese, Dairy, Vegetables, Dairy
    Yield: 10 servings

    4 sl Bacon
    18 lg Eggs
    1 c Milk
    1 c Shredded Cheddar cheese
    1 c Sour cream
    1/4 c Sliced green onions
    1 1/2 ts Salt
    1/2 ts Pepper

    In a large skillet, cook bacon over medium heat until
    crisp. Remove to paper towel to drain.

    In a large bowl, beat eggs. Add milk, cheese, sour
    cream, onions, salt and pepper.

    Pour into a greased 13" X 9" baking dish. Crumble bacon
    and sprinkle on top. Bake, uncovered, @ 325ºF/165ºC
    until knife inserted in center comes out clean, 40-45
    minutes. Let stand for 5 minutes.
