MMMMM----- Recipe via Meal-Master (tm) v8.06

Title: Maryland White Potato Pie

Yield: 1 Pie

2 md Russet potatoes; peeled,
-boiled and diced
1 c White sugar
1 cn Sweetened condensed milk
4 Eggs; beaten
2 Lemons; juice of both, plus
-zest of one
1/4 ts Nutmeg
4 tb Unsalted butter; melted
1 1/2 ts Salt (or 1/2 ts if using
-salted butter)
1 ts Vanilla extract (optional)
1 Pre-baked pie pastry or
-crumb crust

Combine potato and sugar in food processor or blender and process
until smooth. Add eggs. Continue to process, adding remaining
ingredients. Pour into pie shell and bake at 350°F for 1 hour or
until top appears golden brown.
