1 c Tomato sauce
2 Tomatoes; diced
2 Green peppers; chopped
2 Onions; diced
Oregano; to taste
Basil; to taste
6 Eggs
1/2 c Parmesan or other cheese;
-grated
Saute onions and pepper in hot oiled frying pan. Cook until tender.
Add tomatoes and simmer until tomatoes are cooked. Add sauce and
seasonings. Poach eggs in vegetable mixture and top with grated
cheese. Serve on toast or with a pita bread.
