3 c Raw potatoes; finely diced
1 sm Onion; diced
1 tb Parsley
1/2 ts Salt
1/2 ts Black pepper
Mix all ingredients together and spread into hot, oiled frying pan.
Press potato mixture with spatula into a flat cake. Cook potato
mixture slowly and shake it to keep it from sticking. Flip potato
mixture when browned and allow to simmer 5 minutes. Top with buytter
and serve with eggs.
