Saute onions and mushrooms in oil until tender. Add broken up pieces
of spinach and add a little water to steam. Add cheese and stir
gently. Make 6 indentations in spinach mixture and crack and egg into
each. Simmer until eggs are cooked to your preference. Serve on toast
or bagels.
