    29 October 1792 - A BRITISH VISITOR NAMES OREGON'S HIGHEST PEAK:
    Britain's Lt. William Broughton, traveling in Captain Vancouver's
    company, spots a "very high, snowy mountain," as he stands on
    present-day Sauvie Island in the American Northwest's Columbia River.
    He'll name the stratovolcano 'Mount Hood' in tribute to British admiral
    Samuel Hood.

    Mount Hood is a dormant stratovolcano in the Cascade Volcanic Arc. It
    was formed by a subduction zone on the Pacific coast and rests in the
    Pacific Northwest region of the United States. It is located about 50 mi
    (80 km) east-southeast of Portland, on the border between Clackamas and
    Hood River counties. In addition to being Oregon's highest mountain, it
    is one of the loftiest mountains in the nation based on its prominence,
    and it offers the only year-round lift-served skiing in North America.

    Yield: 2 Servings

    1/2 lb Cougar tenderloin; in bite
    - sized pieces
    1/2 (ea) yellow, red and green
    - bell pepper
    2 Rings of canned pineapple;
    - diced
    1 cl Garlic; minced
    Oil for frying

    MMMMM--------------------------MARINADE-------------------------------
    1 ts Soy sauce
    Rice wine to cover meat
    2 ts Corn starch

    MMMMM---------------------------BATTER--------------------------------
    1/2 c Water
    2 tb Flour
    1 tb Starch
    1/2 ts Soda
    1/2 Egg
    1 ts Oil

    MMMMM---------------------------SAUCE--------------------------------
    1 1/2 tb Ketchup
    1 ts Plum sauce
    1/4 ts Worcestershire sauce
    1 ts Oyster sauce
    1 ts Cornstarch
    1 ts Sugar
    2 tb Water

    Mix batter, coat meat and fry. Set aside and drain oil.

    In a wok or large saucepan, brown garlic in a small
    amount of oil. Add peppers and pineapple. Heat for 5-10
    minutes. Add sauce and let thicken. Then add meat. Serve
    over steamed rice.
