Question here, What's the difference between red delicious and golden
delicious apples - other than the colour/pigment of the peel, that is?

If I've not seen then come off their tree/before they're peeled I cannot
seem to detect any differences. FWIW - in my opinion Delicious are a
nice "Pick it and eat it" variety. My current favourite "cooking" apple
if the recently introduced "Cosmic Crisp" (a close cousin to the "honey
    crisp") line.

    Title: Bacon-Fried Apples - 3 Ways
    Categories: Five, Fruits, Pork, Herbs
    Yield: 4 serving

1 lg Red apple; cored and sliced
    - 1/4" thick
    2 tb Bacon drippings

    MMMMM-------------------CHOOSE YOUR FAVORITE-------------------------
    ds cinnamon
    ds Nutmeg
    ds Garam masala

Wash and slice apple in 1/4" slices.

Heat bacon dripping in a frying pan over medium to
    medium-high heat until melted.

Add the apples and allow to cook undisturbed for 2 - 3
minutes to allow them the brown. Then flip and cook for
    an additional 2 - 3 minutes.

Sprinkle with the seasoning of your choice of cinnamon,
nutmeg or garam masala. Or a combination.

    Enjoy!

You might want to double the recipe if you intend to
share. I would happily gobble up the entire thing myself
    without sharing. - UDD

The original Moosewood recipe just said no "delicious" apples. I changed it
to "red delicious" to be specific. I don't seem to recall seeing golden delicious in the store in recent years, so i can't speak for the grocery
store variety. My folks planted multiple apple trees including both red and golden delicious. Seems to me that the home grown red delicious are better than the store bought, because the home grown are more crisp and less
"foamy." I actually like the home grown red delicious better than the
home grown golden delicious, but neither is my favorite apple.

I normally cook with a home grown "red gravenstein" variety that i haven't
seen anywhere else. In the middle of the winter i'll often cook with
Granny Smith from the grocery store.

A lot of Moosewood's stuff is pretty basic being written up "Back-in-thr
day" before it beczame more than a niche subject.

The "delicious" variety of apple is mealy in the exterfme, including the Jonathan offshoots.

My normal "cooking" and "general purpose" applesm tend to be some form
or cultiar of the Northern Spy family.

    Title: Hot Apple Cider
    Categories: Five, Beverages, Fruits
    Yield: 8 Servings

1/2 ga Cloudy apple juice (cider)
    4 (1") cinnamon sticks
    1/2 ts Ground cinnamon
    1/4 ts Nutmeg
    6 Whole cloves

In a saucepan, bring all the ingredients to a boil,
reduce heat and simmer for about ten minutes.

Strain the spices before serving. Enjoy

ALTERNATE VERSIONS: You can add a slice orange to the
pot for a citrus twist. OPTIONAL: add some rum before
    serving.

NOTES: I first experienced this at Lincoln's New Salem
Historical Site during the annual "Christmas at New
Salem" put on by the Illinois Historic Preservation
Agency. It was served by ladies from the Springfield
Junior League in period dress - at the Rutledge Tavern

It was like drinking a slice of apple pie. I was so
hooked on it that I hung about and cadged the recipe.
This is a reduction in quantity version. But otherwise
    true to the bone.
