    Title: Best Ever Potato Soup
    Categories: Potatoes, Pork, Vegetables, Herbs
    Yield: 8 servings

    6 sl Bacon; diced
    3 c Diced, peeled, potatoes
    1 sm Carrot; grated
    1/2 c Chopped onion
    1 tb Dried parsley flakes
    1/2 ts (ea) salt & pepper
    1/2 ts Celery seed
    14 1/2 oz Can chicken broth
    3 tb A-P flour
    3 c Milk
    8 oz Velveeta; diced
    2 Green onions; thin sliced,
    - opt

    In a large saucepan, cook bacon over medium heat until
    crisp, stirring occasionally; drain drippings. Add
    vegetables, seasonings and broth; bring to a boil.
    Reduce heat; simmer, covered, until potatoes are tender,
    10-15 minutes.

    Mix flour and milk until smooth; stir into soup. Bring
    to a boil, stirring constantly; cook and stir until
    thickened, about 2 minutes. Stir in cheese until melted.
    If desired, serve with green onions.

    Title: Chicken Penne Casserole
    Categories: Pasta, Poltry, Vegetables, Herbs, Cheese
    Yield: 4 servings

    1 1/2 c Uncooked penne pasta
    1 tb Oil
    1 lb Boned, skinned chicken
    - thighs; in 1" pieces
    1/2 c Chopped onion
    1/2 c Chopped green pepper
    1/2 c Chopped sweet red pepper
    1 ts Dried basil
    1 ts Dried oregano
    1 ts Dried parsley flakes
    1/2 ts Salt
    1/2 ts Crushed red pepper flakes
    3 cl Garlic; minced
    14 1/2 oz Can diced tomatoes;
    - undrained
    3 tb Tomato paste
    3/4 c Chicken broth
    2 c Shredded mozzarella cheese
    1/2 c Grated Romano cheese
    Minced fresh parsley; opt

    Set oven @ 350ºF/175ºC.

    Cook the pasta according to package directions.
    Meanwhile, in a large saucepan, heat oil over medium
    heat. Add the chicken, onion, peppers and seasonings;
    saute until chicken is no longer pink. Add garlic; cook
    1 minute longer.

    In a blender, pulse the diced tomatoes and tomato paste,
    covered, until blended. Add to chicken mixture. Stir in
    broth; bring to a boil over medium-high heat. Reduce the
    heat; cover and simmer until slightly thickened, 10-15
    minutes.

    Drain pasta; toss with chicken mixture. Spoon half of
    the mixture into a greased 2-qt. baking dish. Sprinkle
    with half of the cheeses. Repeat layers.

    Cover and bake 30 minutes. Uncover; bake until heated
    through, 15-20 minutes longer. If desired, garnish with
    parsley.

    Title: Crustless Spinach Quiche
    Categories: Greens, Mushrooms, Pork, Cheese, Eggs
    Yield: 8 servings

    1 c Chopped onion
    1 c Sliced fresh mushrooms
    1 tb Canola oil
    10 oz Box chopped spinach; thawed,
    - well drained
    2/3 c Fine chopped fully cooked
    - ham
    5 lg Eggs
    3 c Shredded Muenster or
    Monterey Jack cheese
    1/8 ts Pepper

    In a large skillet, saute onion and mushrooms in oil
    until tender. Add spinach and ham; cook and stir until
    the excess moisture is evaporated. Cool slightly. Beat
    eggs; add cheese and mix well. Stir in spinach mixture
    and pepper; blend well. Spread evenly into a greased 9"
    pie plate or quiche dish. Bake @ 350ºF/175ºC for 40-45
    minutes or until a knife inserted in center comes out
    clean.

    Title: Lemon Custard Magic Cake
    Categories: Cakes, Desserts, Citrus, Dairy
    Yield: 9 servings

    4 lg Cold eggs; separated
    3/4 c Flour
    3/4 c Sugar
    2 c Milk
    4 tb Melted butter; cooled
    Zest & juice of one lemon

    Set the oven @ 325ºF/165ºC.

    Prepare a tall, square cake pan by lining it with
    parchment paper. In a mixing bowl, combine the flour,
    sugar, egg yolks, melted butter, lemon juice, lemon zest
    and 1/2 cup of the milk. Whisk to combine and then whisk
    in the remaining milk.

    In the bowl of a stand mixer with the whisk attachment,
    beat the egg whites on high speed until stiff peaks
    form. Carefully fold the egg whites into the liquid
    mixture, folding in one-third of the egg whites at a
    time. Be sure the liquid at the bottom of the mixing
    bowl is fully incorporated each time.

    Pour the batter into the prepared cake pan. Place the
    pan in the oven and bake the cake for 45 minutes until
    the top is lightly golden and a tester inserted in the
    middle comes out clean.

    Allow the cake to fully cool in the pan for at least one
    hour. Remove the cake from the pan, pulling it out using
    the sides of the parchment paper. Dust the top with
    powdered sugar before slicing and serving at room
    temperature or chilled.
