    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Bacon Wrapped Pork Tenderloin
    Categories: Pork, Condiments
    Yield: 4 servings

    10 sl Thin-sliced bacon
    1 1/2 lb Pork tenderloin
    1 tb (packed) brown sugar
    3/4 ts Ground mustard
    3/4 ts Garlic powder
    1/2 ts Salt
    Kitchen twine

    Set the oven @ 425ºF/218ºC.

    Line a medium baking sheet (15" X 10" X 1") with foil.
    Lay out the bacon strips on the baking sheet so that the
    long edges are slightly overlapped.

    Combine the brown sugar, ground mustard, garlic powder
    and salt in a small bowl. Rub this spice blend over the
    entire surface of the pork tenderloin.

    Center the seasoned tenderloin on top of the bacon
    strips; the tenderloin should be perpendicular to the
    strips. Going one strip at a time, pull up the ends of
    the bacon over the pork, overlapping the ends, until the
    tenderloin is completely wrapped up in bacon. Cut
    several pieces of kitchen twine; tie them around the
    meat at 3-inch intervals to help hold the bacon wrap in
    place.

    Place the pan in the oven and roast the bacon-wrapped
    pork tenderloin: 40-45 minutes for 1 1/2 pounds.

    Broil the tenderloin for 1-3 minutes to crisp up the
    bacon strips.

    Remove and discard the kitchen twine, then let the pork
    rest for five minutes. Slice it into pieces with a sharp
    knife, and serve the tenderloin while it’s hot.

    This looks good--pork and more pork. (G) To update you--we left TX last
    Friday, headed to Carlsbad Caverns (NM) which we toured Saturday. Left
    Sunday and headed to the Phoenix area where we visited with younger
    daughter and sons. Left there this past Thursday and started north to
    Utah. Now outside of SLC for a while.

    Mostly no meals to remember while on the road but had a good German meal
    and an average Tex-Mex one while in Fredericksburg, TX. While in AZ we
    met daughter and sons at Ikea one night for supper (swedish meatballs,
    of course) and touring the store. Last time I'd been in one was in the
    mid 80s, outside of Frankdurt, West Germany. Bought several things,
    including some Swedish chocolate--see how it compares to others,
    including some from Aldi.

    New camper had been doing well but for some relativly minor things that
    will be addressed once we get home. Haven't tried the oven yet but may,
    while we're here. Some features are really nice but others aren't that
    great, like having to remove seat cushions to access some storage. We're
    now, in addition to the travel lock for the fridge/freezer, adding a
    bungee cord (to that) to ensure it stays shut on bumpy roads. Also
    trying to get in the habit of swinging the basic lock every time we shut
    it, just to make sure it's locked before hitting the road.

    I've been reading the echo almost every day but not had the chance to
    sit down and do an extended update until now. But, have to stop and get
    on with other things so will sign off for now.

    I've been reading the echo almost every day but not had the chance

    I've been experiencing the joys of being 81 - not least of which are
    from the COPD and Emphysema that heve been there, in the background - watiting. I rather wish they were still waitiing. Especially since I
    am quite sure that they are caused by my cavalier treatment of this
    body when I was a younger person and still 'KNEW IT ALL". Bv(=

    Sounds like no fun. I've been fighting an asthma flare up caused by
    several factors but excacerbated by younger daughter's dusty house and
    (at least) 6 cats plus the same number of dogs, which were, thankfully
    kept outside whenever we were over. Good thing I brought an extra
    albuterol inhaler with me; I will probably need it before we get home.

    Thanks, we're going to go down to the southern part of the state for the eclipse (campground is in the totality zone), then head home. Don't know exactly when we'll be home but for sure by the end of the month.

    Title: Solar Eclipse Moonpie
    Categories: Cookies, Chocolate, Dairy, Candies
    Yield: 6 to 30 cookies

    1 lg Egg
    1 c Granulated sugar
    1 c Sour cream; divided
    1 ts Pure vanilla extract
    2 c A-P flour
    1 ts Baking powder
    1 ts Salt
    1/4 ts Baking soda
    3 tb Cocoa powder

    MMMMM--------------------------ICING---------------------------------
    3 tb Hot coffee
    1 tb Melted butter
    1 tb Cocoa powder
    1/4 c Powdered sugar; added 1 tb
    - at a time
    1 container marshmallow fluff

    Set the oven @ 375ºF/190ºC

    In a medium bowl sift the flour, baking powder, baking
    soda, salt and cocoa, set aside.

    Start by creaming the egg, sugar and vanilla together in
    a mixer. Add the sour cream, ½ cup at a time - combine
    well.

    When the wet ingredients are well combined add half the
    dry ingredients. Continue adding by spoonfuls until all
    of the dry ingredients are combined. Stopping a couple
    of times to scrape down the sides of the bowl to
    incorporate all of the ingredients.

    Lightly grease the baking sheet or using a silicone mat.
    Drop the cookies by scoopers onto the baking sheet. Bake
    in the preheated oven 12-14 minutes until the cookies
    are baked thru.

    Remove from the oven and allow to cool.

    For the icing, combine the coffee, melted butter and
    cocoa and whisk together well. Add the powdered sugar by
    spoonfuls until it's a drizzling consistency.

    Once cookies are completely cool, slather the bottom of
    one cookies with marshmallow fluff. Top it with a second
    cookie and drizzle the icing over generously.

    Inserting three toothpicks up thru the bottom of the
    cookie, thru the fluff and into the top cookie will keep
    the cookies together until they set up. Remove the
    toothpicks prior to serving!

    Serve with and enjoy the eclipse!

    NOTES: This will make six moonpies using a large ice
    cream scoop. If you're making smaller cookies about 30 -
    reduce baking time to 8-10 minutes.

    wet today after being quite hot in TX and AX, not quite so in UT but
    hot enough to melt chocolate. Tastes just as good cold or doesn't take
    long to warm up.

    up that it doesn't take that much to set off an attack.

    Title: Mocha Moons
    Categories: Five, Desserts, Nuts, I scream
    Yield: 4 Servings

    2 pt Coffee ice cream
    1 c Cashew nuts;finely chopped
    Mocha Sauce

    Put chopped nuts in a pie plate. Cut cylinder container away
    from ice cream. Roll ice cream in chopped nuts, pressing
    nuts into sides. Repeat with second pint. Wrap each pint in
    plastic wrap and chill 1 hour. To serve, cut roll in half
    lengthwise and then each half into 4 moon-shaped slices.

    Serve two moons topped with Mocha Sauce.

    Makes 4 servings.

    About the only thing to do then is to wait it out; some days are more
    painful than others, same with breaths. Weather has turned cold and wet
    so I'm coughing (and grabbing the albuterol) more often.

    We will, home tomorrow. Nothing spectacular for meals but good reheated
    fajitas last night. They were originally made last Friday when the granddaughters were with us.

    watch the progress. Got outside before it started and every so often
    would look up at the sun (with the saftey glasses). Temps definatly
    cooled off as it progressed. Steve was able to link in with a group of
    ham operators in western US, I think Wyoming and Utah, plus other areas
    so gave them progress reports. After it was over we made lunch, then
    took the girls to meet up with their parents. Spent a quiet day in camp
    on Sunday, then hit the road on Monday. We stopped in Frankfort, KY for
    some Ale 8 Zero soda and Rebecca Ruth's chocolates, spending the night
    in a Cracker Barrel parking lot in Beckley, WVA. Home, with probably 3
    loads of laundry tomorrow.

    Yield: 6 servings

    1/2 Head Romaine lettuce;
    - chopped or torn
    1 Yellow/orange bell pepper;
    - sliced
    1/2 English cucumber; sliced,
    - halved
    1 c Grape tomatoes
    1 c Olives; pitted, black or
    - green
    1/4 lg Red onion; sliced
    1/2 c Parmesan cheese; grated
    1 c Butter croutons
    2 tb Dry roasted sunflower seeds
    Creamy Italian salad dressing

    Place all ingredients in a large bowl and toss together
    until evenly mixed and coated. Serve immediately.

    UDD NOTE: If making salad in advance sdd the croutons,
    sunflower seeds, and dressing right before tossing and
    serving.

    on Sunday, then hit the road on Monday. We stopped in Frankfort, KY for some Ale 8 Zero soda and Rebecca Ruth's chocolates, spending the night
    in a Cracker Barrel parking lot in Beckley, WVA. Home, with probably 3 loads of laundry tomorrow.

    I've done both solar and lunar totalities. I much prefer the lunar
    guys.

    Same here; I remember seeing one in the winter years ago, think I was a
    pre teen. It was a clear, cold night so I didn't stay outside that long.
    BTW, got home yesterday with 6,220 more miles on the truck. Had the
    70,000 servicing in UT at the Ford dealership our grandson works at.
