    15 September 1978 - BOXER MUHAMMAD ALI IS A TRIPLE THREAT: Fighting
    against an opponent 11 years his junior at the Superdome in New Orleans,
    boxer Muhammad Ali, 36, scores a unanimous win after 15 rounds against
    Leon Spinks to take the world heavyweight boxing title. Ali becomes the
    first boxer to win the heavyweight championship belt three times.

    Born and raised in Louisville, Kentucky, he began training as an amateur
    boxer at age 12. At 18, he won a gold medal in the light heavyweight
    division at the 1960 Summer Olympics and turned professional later that
    year. He converted to Islam after 1961. He won the world heavyweight championship, defeating Sonny Liston in a major upset on February 25,
    1964, at age 22. During that year, he denounced his birth name as a
    "slave name" and formally changed his name to Muhammad Ali. In 1966, Ali refused to be drafted into the military owing to his religious beliefs
    and ethical opposition to the Vietnam War and was found guilty of draft
    evasion and stripped of his boxing titles. He stayed out of prison while appealing the decision to the Supreme Court, where his conviction was overturned in 1971. He did not fight for nearly four years and lost a
    period of peak performance as an athlete. Ali's actions as a
    conscientious objector to the Vietnam War made him an icon for the
    larger counterculture of the 1960s generation, and he was a very
    high-profile figure of racial pride for African Americans during the
    civil rights movement and throughout his career. As a Muslim, Ali was
    initially affiliated with Elijah Muhammad's Nation of Islam (NOI). He
    later disavowed the NOI, adhering to Sunni Islam.

    Title: Cassius' Boneless Pork Chops w/Apples
    Categories: Pork, Vegetables, Herbs, Chilies, Fruits
    Yield: 5 servings

    5 Boneless pork chops; trimmed
    4 cl Minced garlic
    1 ts Salt
    1/4 ts Coriander
    1/4 ts Ground ginger
    1/4 ts Sage
    Black pepper & cayenne
    2 tb Unsalted butter; divided
    1 tb Olive oil
    1/4 ts Spiced mustard
    1/2 tb Honey
    1 tb BBQ sauce
    2 lg Gala apples; sliced 1/2"
    2 lg Onions; thick sliced
    2 tb Apple cider vinegar

    2 tb Lemon juice
    2 ts Chopped fresh parsley or
    - thyme
    Chopped fresh parsley;
    - garnish

    Your favorite herb; garnish

    In a small bowl mix all together minced garlic, salt,
    coriander, ginger, sage, black pepper, cayenne, spice
    mostard and BBQ sauce and make a paste. Put in a large
    bowl the boneless pork chops and marinate for 5 minutes.

    Put flour on a plate to coat lightly the boneless pork
    chops, taking off the excess flour.

    In a large skillet melt one tablespoon butter with one
    tablespoon oil over medium-high heat. Pan-seared the
    boneless pork chops on both side until lightly
    golden-brown for 2 minutes per side.

    Remove the boneless pork chops from skillet.

    Saute the onions and apples until the onions are
    caramelized and the apples have begun to soften about 3
    minutes. Remove and set aside.

    Now add the the apple cider or lemon juice and let it
    thicken 5 minutes. Add water if it needed. Bring back in
    the skillet the boneless pork, the apples and onions.
    Cook until the pork cooked through about 5 minutes.

    Garnish with parsley or your favorite herb. Serve with
    rice, mashed potato or pasta.

    Makes 5 po'k chops
