Title: Mini Shepherd's Pies

Yield: 8 miniature pies
1 tb Rapeseed (canola) oil
1 Onion; peeled, chopped
2 cl Garlic; crushed
2 Carrots; peeled, diced
1 Stick (rib) celery; diced
1 Yellow bell pepper; cored,
- diced
pn Ground cumin
250 g (8 oz) lean lamb mince; 10%
- fat
1 Courgette (zucchini); diced
2 tb Tomato puree
400 mL (1.6 c) low salt beef stock
100 g (3.5 oz) lentils; thoroughly
- rinsed
1.2 kg (2.6 lb)Maris Piper potatoes
50 g (1 3/4 oz) butter
75 mL (5 tb) milk
60 g (2 oz) grated cheddar
Heat the oil in a medium saucepan, add the onion and
cook for around 5 mins until softened. Stir in the
garlic, carrots, celery, pepper and cumin. Cook for a
further two mins, then add the lamb. Brown the meat,
tipping off any excess fat. Add the courgette and tomato
puree, then fry for a few mins more. Pour in the stock,
add the lentils and bring to a simmer. Cook for 40 mins,
stirring from time to time.
Heat the oven to 180-|C/355-|F (160-|C/320-|F-fan)/gas 4.
Boil the potatoes for 10-15 mins until tender. Drain,
then mash with the butter and milk.
Remove the lamb mixture from the heat and use a stick
blender to puree. Stir as you puree, blending down the
pieces of vegetables. Spoon into 8 largish individual
ramekins. Top with the mash and grated cheese. The pie
can now be chilled and frozen for up to a month.
To cook from frozen set the oven @ 160-|C/320-|F (140-|C/
285-|F fan)/gas 3 for about 40 mins, then turn up to
180-|C/355-|F (160-|C/320-|F-fan)/gas 4 for 20-30 mins or
until golden on top and piping hot in the centre.
Bake for 30 mins until the top is golden and the mince
is bubbling up at the sides. Leave to stand for at least
10 mins before serving. Check it has cooled down
sufficiently in the centre before giving it to young
children.
GLUTEN FREE: Not all stock cubes are gluten-free. Always
check the packaging if this is important. Kallo very low
salt organic beef stock cubes are gluten-free.
UDD NOTE: You can make this with 90% lean ground beef
or chicken/turkey which turns it into "Cottage Pie".
And is nearly as tasty.
Makes 8 individual pies for young children

Title: Kid-Friendly Fruit Salad

1/4 Fresh pineapple; in bite-
- sized chunks
1 Orange; peeled, in bite-
- sized pieces
1/4 Red apple; in bite-sized
- pieces
5 Seedless red grapes; halved
5 Seedless green grapes;
- halved
2 c Strawberry yogurt
Stir pineapple, orange, apple, red grapes, and green
grapes together in a bowl. Pour yogurt over the top and
stir to coat completely.
