Split Pea Dip

Title: Split Pea Dip

Yield: 1 Batch
1 c Yellow split peas; heaping
2 sm Onions; one chopped coarsely
-and the other finely
1 cl Garlic; chopped coarsely
6 tb Extra-virgin olive oil
1 tb Fresh oregano; chopped
Salt and pepper
Warm pita bread to serve
Rise the split peas under cold running water. Put in pan and add the
coarsely chopped onoin, the garlic, and plenty of cold water. Bring
to a boil then simmer for about 45 minutes, until very tender.
Drain the split peas, reserving a little of the cooking liquid, and
put in a food processor. Add 5 tablespoons of the olive oil and blend
until smooth. If the mixture seems too dry, add enough of the
reserved liquid to form a smooth, thich puree. Add the oregano and
season with salt and pepper.
Pour the mixture into a serving bowl and sprinkle with the finely
chopped onion and extra oregano if desired. Drizzle over the
remaining olive oil.
Serve warm or cold with pita bread.
