I've been gifted with a lot of tomatoes - from my neighbour lady who leaves them on the chair outside the front door, my brother who is re- gifting the bounty from his wife's son, my friend Les sharing the
bounty of his raised bed garden. He planted a pair of tomato vines for
his wife to use in her cooking - he is allergic to raw tomatoes. So
there is an over-abundance. I've been passing some of my bounty to my
boss at A-Z but I think my solution to the overload is going to be a
big batch of read gravy (marinara).

On the other hand, we gave up on our Campari seeds producing any
tomatoes for us this year. The plant was healthy, about six foot tall.
There were occasional yellow blossoms which we tickled with a q-tip to
try to fertilize them. But in the end -- nothing. We have now chopped
the plant up and put it out with the trash.

OTOH, our son did manage to get some fruit from his share of the
seedlings. BUT, he planted outside and I planted in a bay window --
albeit with a lot of sun.

    Title: Vegetarian Jambalaya
    Categories: Cajun, Vegetarian, D/g, Boat
    Yield: 4 servings

1 cn 28oz Italian plum tomatoes
    1 c Broth(veg, chick, or beef)
1 c Rice, brown, QUICK COOKING
1 ts Garlic; minced; or more
    2 Bay leaves
    1 ts Dried basil
    1 ts Dried thyme
1 ts Tabasco; or to taste
1 lg Green pepper; 1 inch pieces
1 cn 16oz can black eyed peas
    Drained
    Chopped parsley or chives
    For garnish

    MMMMM---------------------------EXTRAS--------------------------------
    1 pk Muffin, corn; mix
    1 Egg, guessing
    1 c Milk, guessing

Cut green pepper into 1 inch pieces. Combine tomatoes, broth, rice,
garlic, bay leaves, basil, thyme and hot pepper sauce in a large
saucepan. Cover and bring to a boil over high heat. Lower heat and
cook according to manufacturers directions. Add the canned black
eyed peas 10 to 12 minutes before rice is done. Stir at least once.

Remove and discard bay leaves. Sprinkle with parsley if desired.

This is a Louisiana inspired stew, rich and fairly thick. For a
    thinner stew, add additional broth.

Serving suggestion: Serve with garlic bread.
