    Good to see you back after a noticeable absence. Hope it was just you
    being off having a fun vacation.

    Our son has been a vegetarian for about 45 years. This is a recipe we
    made to help feed the crew of friends who helped him and his wife move
    into their new home. As said at the bottom, it was liked by all.

    MMMMM----- Recipe via Meal-Master (tm) v8.05

    Title: Rae's Vegetarian Chili - For Move
    Categories: Vegetarian, Easy, Tested
    Yield: 13 Cups

    4 ea Cloves garlic, minced
    1 c Onions, finely chopped
    1/2 c Red bell pepper fine chopped
    1/2 c Celery, finely chopped
    3 tb Olive oil
    28 oz Can diced tomato with juice
    8 oz Can tomato sauce
    6 oz Can tomato paste
    12 oz Beer (Not Dark)
    4 tb Chili power or to taste
    1 tb Mustard powder
    1 ts Dried oregano
    1/2 ts Black pepper
    1 1/2 ts Ground cumin
    1/8 ts Hot pepper sauce
    2 ea 15 oz can black beans
    -NOT drained
    1 ea 15 oz can garbanzo beans
    -Drained/rinsed
    1 ea 15 oz can pinto beans
    -Drained/rinsed
    2 ea 15 oz cans kidney beans
    -NOT drained
    1 ea 15 oz can Cannelli beans
    -Drained/rinsed
    1 ea 15 oz can whole corn
    -NOT drained

    MMMMM----------------------FINISHING TOUCH---------------------------
    3 tb Brown sugar

    MMMMM--------------------------GARNISH-------------------------------
    Fresh cooked macaroni
    Finely diced onions
    Shredded Mexican blend
    OR
    Shredded cheddar cheese

    In large sauce pot, saute garlic, onion, bell pepper and celery in oil
    until translucent.

    Add canned diced tomatoes (undrained) tomato sauce, beer, tomato
    paste, and the spices, and hot sauce.

    Stir in the various beans and bring mixture to a boil. Reduce heat
    and let simmer for 30 to 40 minutes.

    When you turn off the chili pot, stir in 3 teaspoons of brown sugar.
    Stir well so it dissolves.

    Tested 11-07 for Bryan's move to new house. Everyone liked this chili
    ~ even the meat eaters. Will make again.

    made to help feed the crew of friends who helped him and his wife move

    Thanks for the recipe. That's interesting that he has stuck to it for so
    long. I like that model of doing things. I've been to a number of work parties where a bunch of us show up to help, we get fed home-made food,
    and we get to socialize a little bit while we are "working."

    Title: Cauliflower-Cheese Pie
    Categories: Dinner, Pies
    Yield: 1 Pie

    MMMMM---------------------------CRUST--------------------------------
    2 c Raw potato; grated; packed
    1/2 ts Salt
    1 Egg; beaten
    1/4 c Onion; grated

    MMMMM--------------------------FILLING-------------------------------
    1 c Cheddar cheese; grated;
    -packed, heaping
    1 md Cauliflower; broken into
    -small flowerets
    1 cl Garlic; crushed
    1 c Onion; chopped
    3 tb Butter
    1 ds Thyme
    1/2 ts Basil
    1/2 ts Salt
    2 Eggs; beaten together with
    1/4 c Milk
    Black pepper
    Paprika

    Preparation time: about 2 hours including baking

    Heat oven to 400 F.

    Set the freshly-grated potato in a colander over a bowl. Salt it and
    leave it for 10 minutes. Then squeeze out the excess water (which can
    be used for soup stock) and add it to the remaining ingredients. Pat
    it into a well-oiled 9-inch pie pan, building up the sides of the
    crust with lightly-floured fingers. Bake for 40-45 minutes--until
    browned. After the first 30 minutes brush the crust with a little oil
    to crispen it.

    Turn oven down to 375 F.

    Saute onions and garlic, lightly salted, in butter for 5 minutes. Add
    herbs and cauliflower and cook, covered, 10 minutes stirring
    occasionally. Spread half the cheese into the baked crust, then the
    saute, then the rest of the cheese. Pour the custard over and dust
    with paprika. Bake 35-40 minutes--until set.

    digit. As best we can figure out from what he has said, it started when
    he left home for college and has something to do with harvesting of
    sentient beings. He does eat fish.

    Title: Black Bean Burger
    Categories: Vegetarian, Burger
    Yield: 4 burgers

    1 cn Black beans, drained
    1/2 c Onion, finely chopped
    1/2 c Green pepper, finely chopped
    1 lg Carrot, cooked, chopped
    1/2 c Salsa (your choice)
    1 c Multi grain Oatmeal (dry)
    OR Oatmeal (dry)
    2 ts Flour
    1/4 ts Chili powder (or to taste)
    Salt to taste
    Pepper to taste

    Variation of Bean Burger calling for Kidney Beans posted on Intercook
    by Sandee Eveland. I didn't have all the right ingredients for that
    recipe so experimented with black beans instead.

    Mix all ingredients well. Using 1/4 lb hamburger press, make four
    burgers.

    Can vary the taste with more/less spices.

    Preheat electric skillet to 350 degrees. Spray with vegetable spay.
    Fry burgers about 15 minutes, turning once or twice until surface is
    golden brown and burger feels "set"

    The consistency of these burgers "May" allow them to be grilled on
    bbq. Have not tried that yet.

    Will have son evaluate this experiment. These passed the taste test!

    Cool of you to support his dietary restrictions for so long.

    It's going on 20 years for me, though i am less strict than i once was.
    I am starting to call myself a freegan, which is basically a glorified
    term for dumpster diving.

    Do fish feel pain? Of course they do. I mean, how do you think
    they feel with a hook in their mouth, being reeled in by some human?
    And then lifted out the water, sometimes even without a net. And
    once on board a boat, or on land, the hook yanked out of their mouth
    and then thrown into an ice box to freeze to death.

    The least fishermen could do is whack them with a paddle once
    brought into the boat. That way the misery would end right away.

    But you know how it is.
    Fishermen are masochists and sadists, sometimes both at the same
    time. And never knowing when to quit. Especially when the fish are
    biting.

    Minnows ad guppies

    Scoop them up in your hands, put them in mouth, and swallow.
    No chewing necessary.
