    I've been trying to get to bed before midnight, tho some nights I
    don't get to sleep until 5 or 6 am. I've an alarm that goes off at 7:30

    from my apartment to the bus stop I use to go to the VA. I

    Good for you. I am at the stage where I wish I could walk seven minutes without my rollator.

    Looks like you're doing well; a 7 minute walk is a good start. If your
    VA is like the Durham one, you'll be walking a lot more once you get there. (G)

    Our truck is in the shop right now but they gave us an F-150 SuperDuty
    as a loaner. Can't pack it full of radio stuff but that means I can do
    a huge Wegman's run if needs be. (G) Went over there on Saturday
    intending on only picking up a couple of things but ended up with much more. Our shopping bags were at home so we bought another one (always useful) and the cashier packed it quite full. Only things she didn't
    put in were the eggs (2 dozen) and a couple of loaves of bread.

    We call that "it just jumped into the basket". We can go to the store (especially BJs) with a shopping list of four or five things, and come
    out with $150 to $200 worth of stuff.

    Title: Mini Apple Crisp
    Categories: Tested, Easy, Micro, Baked
    Yield: 2 Servings

    2 md Apple (cooking)(honeycrisp)
    2 tb All purpose flour
    4 tb Brown sugar
    3 tb Butter
    5 tb Oatmeal
    1/4 ts Ground cinnamon

    Use honey crisp or granny smith or gala apple

    Peel apple and slice. Place apple slices in two 10 oz pryex dishes).

    In small bowl combine flour and brown sugar, then cut in butter until
    mixture resembles coarse crumbs. Add oats and cinnamon.

    I mixed spices, flour, oats altogether at the start.

    Sprinkle mixture over apple slices.

    Place the two cups on little pizza pan and place both in toaster oven.

    Baked, uncovered in preheated 400 degree toaster oven for about 35 to
    40
    minutes or until apples are tender.

    Tested 10/08 in toaster oven. 10/28/14.


    Great taste - will do again.

    Variation of recipe for Cooking for 2.

    Identical recipe can be used in Microwave - Microwave on Hi for 3
    minutes or until apples are tender.

    One nice thing about those sleepless nights is that I'll fall asleep
    fast the next night. I'll wake up around 3 am, thinking I've slept all
    night and surprised to find it's only 3-ish. And, during the summer with
    it getting light earlier, if I see light around 5:30 or so, I wonder why
    it's so late--but then I check the time and go back to sleep. In Alaska
    when we were on land, it never really got dark even tho the sun set. It
    was a sort of twilight until the sun came up so the hotel rooms had room darkening drapes--helped us sleep "normal" times.

    That was Sean's comment. I can walk longer if it's at a normal pace; if
    it's a fast walk, I'll get winded faster.

    We do it more often than we should, especially at Wegman's or a place
    like Costco or Sam's. Coming home from Raleigh (with our truck) today,
    tho, Steve asked if I wanted to stop at Wegman's. Nothing I urgently
    needed so I declined. Nice having them so convenient tho.

    Looks like a good one. Steve will do a "baked" apple in the microwave,
    most often during the winter. He has to take a bedtime med with food so
    will sometimes do an apple that way.
