2 cl Garlic; crushed
1 Celery rib; minced
1/4 c Sunflower seeds
2 tb Olive oil; up to 3 tb

2 1/2 c Brown rice; cooked; (1 1/4 c
-dry raw brown rice)
1 ts Dried mint; up to 2 ts
1 Lemon; juice of
1/4 c Parsley; freshly chopped
Salt and pepper to taste
The Greek Pilaf is a basic way of preparing rice as a filling for
grape leaves, artichokes, or Greek-style eggplant. It is delicious
enough to serve by itself also, or as an accompaniment to sauteed
vegetables or baked fish.
Saute the vegetables until onions are soft. Then mix with the pilaf
ingredients.
