    4 lb Frying chicken; in eight
    - serving pieces

    MMMMM--------------------------BREADING-------------------------------
    1 tb Sugar
    1 1/2 c Self-rising flour
    1/2 c Cornstarch
    3 ts Seasoned salt
    2 ts Paprika
    1/2 ts Baking soda
    1/2 c Biscuit mix
    1 Envelope Italian Dressing
    - Mix
    1 Envelope Onion Soup Mix

    MMMMM------------------------COATING DIP-----------------------------
    2 lg Eggs
    +=MIXED w/ITH=+
    1/4 c Cold water
    1 c Corn oil

    Combine all breading ingredients and blend well. Store
    tightly covered at room temperature up to 3 months.

    TO USE - Dip the chicken pieces in egg mixture and then
    into dry coating mix and back into egg to coat pieces
    evenly and finally back into dry mix. Have oil hot in a
    heavy skillet. Brown skin-side down for 4 to 6 minutes.
    Use medium high heat. Turn and brown a few minutes.

    Transfer to an oiled or Pam-sprayed 9" x 12" x 2" pan.
    Cover pan with foil, sealing only 3 sides of pan. Bake
    350-oF/175-oC for about 45 to 50 minutes. Remove foil.
    Bake another 5 min just to crisp the coating.

    Psalm 119:11 Thy Word have I hid in my heart that I might not sin
    against Thee. But, yes, His Word is also to be proclaimed.


    I think "hold" or "keep" rather than "hide" would be more appropriate.

    Depends on the version you read, old KJV used "hide", ESV says "stored up"--pays your money, takes your choice.

    We used to have a Church's locally .... but their location did them in.
    It was at an intersection of two busy streets - one of which could not
    be used for entry/exit as it was on the downslope of the viaduct under
    the rail corridor (6 tracks) that the propert backed up on. And the
    location at a traffic light meant that the entrance/exit on that road
    were usually blocked by motorists waiting for the light to change or
    zipping along trying to get through the corner before having to stop and
    wait. After the chicken place closed some optimist had a used car lot
    there for a while. But, mostly, the property has been vacant.

    Popeyes, meanwhile, continues to do a "land office" business in their
    two easily accessible locations. They have recently added a blackened
    chicken sandwich to their line-up.

    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Popeyes Blackened Chicken
    Categories: Poultry, Herbs, Chilies,
    Yield: 4 servings

    2 lb Chicken breast or tenders
    - sliced
    4 tb Butter
    4 tb Oil

    MMMMM------------------------SEASONING-------------------------------
    1 tb Smoked paprika
    2 ts Salt
    1 ts Black pepper
    2 ts Garlic powder
    1 ts Onion powder
    1 ts Dried oregano
    1 ts Brown sugar
    1/2 ts Chipotle powder

    Set your oven @ 400ºF/205ºC and line a baking sheet with
    parchment paper (or foil, if you have no parchment
    paper). Gather all of the ingredients you need. If using
    breasts, slice into chicken tender like strips.

    Add the seasoning ingredients into a bowl and stir to
    ensure everything is evenly distributed. Grab a large
    bowl and add the chicken, half of the vegetable oil (two
    tablespoons), and your seasoning. Mix and toss well, so
    that each chicken piece is completely covered. Leave for
    at least 20 minutes. Or anywhere up to 24 hours (it
    should then be covered and kept in a refrigerator).

    With the remaining half of the oil (2 tablespoons), add
    to a skillet. Once hot, add the tenders (do not
    overlap). Sear for around 2 minutes on each side. Do not
    sear for longer than that. Then place your chicken
    tenders onto your prepared baking sheet. Place in the
    center of your oven for around 10 minutes. Take out of
    oven and leave to cool slightly.

    Leave the chicken to rest for around 5 minutes. In the
    meantime, add the butter to the pan so it melts. Stir
    continuously until completely melted. Now pour the
    butter over the blackened chicken. Your chicken is now
    ready to serve. Enjoy!

    If you’d like to air fry your chicken instead of baking,
    do not sear the chicken. Just place the chicken tenders
    into a heated air fryer (375ºF/190ºC) for around 8-10
    minutes. Be sure to check the chicken often to ensure it
    doesn’t overcook.

    They have a flip-phone that would be tempting if I could not get a smart
    phone for only $10 more at Wally-mart and then put their free SIM card in
    it. It looks like a nice phone.

    not a smarty phone. It filled all my needs for a mobile phone - took
    calls, made calls, received and sent text messages. If it had the right protocols installed for it to talk to the current cellular networks I'd
    still be using it.

    The neat thing was the QWERTY keyboard. No more counting keypresses to
    get the letter/number you want. Worked best with a stylus though.

    In other news - Arby's (locally at least) has quit their wonderful pecan chicken salad sandwiches. So, thinks I, I'll make some. Using 3 cups of
    deli chicken salad, I added 3 oz of pecan pieces and a Cosmic Crisp apple
    that I had diced on my "As seen on TV Vidalia Onion Chopper". Didn't
    have any grapes on hand so I skipped those. But, I'm going to have to
    play with that recipe. What I got was a nice, very tasty apple-pecan
    salad with chicken salad binder.

    I'm going to work on the proportions - then e-mail Ms. Manley with a
    "real deal" copycat recipe. Bv)=

    Title: Arby's Grilled Chicken & Pecan Salad

    Yield: 4 servings

    1 c Diced red apple
    1 tb Lemon juice
    2 1/2 c Grilled chicken breast;
    - diced
    1 c Halved grapes
    1/2 c Chopped celery
    1 c Chopped pecans
    3/4 c Mayonnaise
    Salt & pepper
    Lettuce leaves; opt
    Thick-sliced wheat bread;
    - opt

    Place the diced apples in a medium-sized bowl. Add one
    tablespoon of lemon juice and stir to coat the apples to
    prevent them from turning brown.

    Add the chicken, grapes, celery, and pecans to the
    bowl and mix well.

    Add 1/2 cup mayonnaise and stir to combine. If the
    mixture is too dry you can add another 1/4 cup of
    mayonnaise. Season with salt and pepper to taste.

    Allow the flavors to marry in a covered bowl in the
    refrigerator for about 1 hour before serving.

    If you would like to serve the chicken salad as a
    sandwich, place about 1 cup of chicken salad and a few
    lettuce leaves between two thick slices of wheat bread.

    I do like the smart phone, especially when we travel and I can't fire up
    my net book or tablet. I can check the "need to knows" on the phone, use
    it to figure gas milage before we leave the station, find nearby places
    to eat or stay and so on.

    Somebody wasn't fully thinking when the property was bought to use for a
    fast food place. Sounds like a vacant lot is probably the best use of

    I've seen it advertised but not had the blackened (or regular) sandwich
    at Popeye's. Our usual order is a 2 piece meal (ight, mild for me and
    dark, spicy for Steve). He usually gets the red beans & rice; I usually
    get the cole slaw. Most of the time I'll take one piece of chicken and
    both biscuits home for another couple of meals (2 breakfast biscuits,
    one lunch or supper chicken piece) as I just don't have the big appetite
    I used to have.

    The CC flip phone does not have QWERTY, but the keys look pretty large. I
    was tempted by it.

    In other news - Arby's (locally at least) has quit their wonderful pecan chicken salad sandwiches. So, thinks I, I'll make some. Using 3 cups of
    deli chicken salad, I added 3 oz of pecan pieces and a Cosmic Crisp apple that I had diced on my "As seen on TV Vidalia Onion Chopper". Didn't
    have any grapes on hand so I skipped those. But, I'm going to have to
    play with that recipe. What I got was a nice, very tasty apple-pecan
    salad with chicken salad binder.

    2/3 c Semisweet chocolate chips

    In a heavy saucepan, heat the butter, cocoa and sugar over low heat
    until sugar is dissolved, stirring often. Remove from the heat. Stir
    in a small amount of hot mixture into egg. Return all to pan. Cook
    and stir until mixture coats a metal spoon and reaches 160 degrees.
    Remove from the heat. Stir in the cracker crumbs, coconut and
    walnuts. Press into a buttered 9" square pan. Set aside. For filling:
    In a small mixing bowl, beat butter, confectioners' sugar, milk and
    extract until smooth. Tint with green food coloring if desired.
    Spread evenly over bottom layer. Set aside. For topping: In a heavy
    saucepan, melt chocolate chips and butter over low heat until blended
    and smooth, stirring often. Remove from heat. Cool to room
    temperature, about 10 minutes. Spread over filling. Cover and
    refrigerate until set, about 1 hour. Cut into bars. Store in

    for entering texts on an on-screen keyboards. The other day at work the
    Fed-X driver handed me a hand-held electronic receipt book to sign with
    my finger. When I couldn't get anything to appear on the screen - I did
    a "whip out" with the rubber stylus and amazed the guy. And he still had
    to key the last name into the device.

    Naaaaahhhhh. I still get their French Dips (add onion and horsey sauce)
    and their curly fries. That's going to be lunch today - There's a special
    on w/sandwiches @ U$3.00 and curly fries @ U$1.00. So for U$7 plus the governor's vut (tax) I'll have a tasty, filling lunch.

    Yield: 4 Servings

    1 1/2 lb Deli shaved beef; medium
    - rare
    8 sl Emmenthal or pepper-jack
    - cheese; wrap removed
    1 lg Yellow onion; peeled, sliced
    Woerber's Horseradish Sauce
    4 (8") hoagie/deli rolls;
    - split, toasted
    2 tb GFS au jus base
    +=IN=+
    1 qt Tap water
    +=OR=+
    10 1/2 oz Can Campbell's Beef Consomme
    +=AND=+
    1/2 Can water

    Prepare the "dip" first. Either on the stove or in the
    nuker combine the base and water and heat, stirring as
    necessary until all solids are dissolved and ready to
    use. Keep warm.

    Split and toast the rolls. Assemble the shaved beef,
    unwrapped cheese slices, and onion onto the rolls. Add
    horseradish sauce as desired. Place tops on finished
    sandwich. Serve with a small bowl of the dipping au jus
    and potato chips or, if being elabourate French fried
    potatoes/sweet potatoes.

    Serves four normal people
