Antipasto platters are traditional Italian appetizers, comprised
largely of marinated beans and vegetables, complementary to the
ensuing pasta course.
The antipasto can be a meal in itself, if served with bread, cheese,
and wine.
Make an antipasto smorgasbord for a dinner party. It's colorful and
fun to assemble. And it's easy, because most of the dishes are served
cold.
(If you read the "Marinated Vegetables" recipe before reading through
this one, you'll get a good, basic idea of what marination involves.)
Make all or some of the following, and arrange them on many little
dishes (or on one, large, fresh green leaf-lined platter) for an
outstanding salad event:
The Garbanzos:
Soak 2 c garbanzo beans (chickpeas, but call them Garbanzo Beans when
you're cooking Italian-style) in water 1 1/2 hours. Drain, place in
saucepan, cover with more water, and boil until edibly tender (about
1 to 1-1/2 hours.) While they cook, prepare the Garbanzos Dressing.
Add freshly cooked, drained garbanzos to the dressing. Mix and chill
several hours.
