4 md Cucumbers; (7")
3/4 c Sour cream
3/4 c Yogurt
2 cl Garlic; crushed
4 Fresh mint leaves; crushed
1/2 c Red onion; very
-thinly-sliced, (Don't use
-any other kind of onion.
-Red is the only kind that
-works raw this way.)
1/4 c Parsley; very finely chopped
1/4 c Scallion greens; minced
1 ts Honey; up to 2 ts;
-(optional)
1 ts Salt
Black pepper; lots
1 tb Dill; freshly-chopped, (or 1
-ts dried)

MMMMM--------------------------TOPPING-------------------------------
1 c Walnuts; toasted, chopped

MMMMM--------------------------GARNISH-------------------------------
Eggs; hard-cooked, sliced
Tomato wedges
Black olives; chopped
Carrots; sliced

Preparation time: 15 to 20 minutes

Peel and slice the cucumbers (unless they're home-grown and unwaxed,
in which case, don't peel them.) Combine all ingredients except
walnuts. Chill thoroughly and serve on a bed of fresh, crisp greens,
with walnuts on top. Garnish lavishly.
