3 lg Apples; cut in chunks
1/4 c Cheddar or Muenster cheese;
-cubed
1/2 c Dates; chopped
1/4 c Toasted nuts; or more if
-desired
1 Celery rib; chopped

MMMMM--------------------------DRESSING-------------------------------
1/2 Lemon; juice of
1/2 c Mayonnaise
1/4 c Orange juice
1/2 ts Fresh orange rind
Honey; (optional)

Whisk together the dressing ingredients. Add honey only if necessary.
Toss together all other ingredients. Combine everything and chill.
Serve on fresh spinach, with thick slices of whole wheat toast, for a
simple and luxurious lunch.
