1/2 c Butter
1 1/2 ts Baking powder
1 c Brown sugar
1/2 ts Soda
3 Eggs
1/2 ts Salt
1/4 c Buttermilk
1 c Mashed bananas
3/4 c Whole wheat flour
1/2 ts Vanilla
1 c Unbleached flour
1 c Bran cereal
Preheat oven to 350 F.
In medium bowl, mix together dry ingredients; set aside. In large
bowl, cream together butter and sugars. Add egg and buttermilk
alternately with combined dry ingrediants. Fold in mashed bananas,
vanilla, and bran cereal.
Fill greased or paper lined muffin tins with batter. Bake 15 to 20
minutes.
