    Avon I'm diggin' these new echo's you've added! Thank you!

    My favorite foods, number one being a significant distance from the rest, I'd be curious to know if others enjoy. Maybe we could share recipes.

    1. New Mexican / Colorado Green Chili and mexican food. The green chili an extremely spicy dish that unlike most "hot" peppers, don't burn the tongue as much as cause you to sweat it out, and open up the sinuses, with a wonderful taste that keeps me going back for more. From my understanding, Southwestern Mexican Food, is a mix of Native American and Mexican combined into a rather unique dish. Mostly because of the Hatch Chili pepper, which only grows in the right dessert like conditions, and to my understanding get hotter every year if planted within the same location. Pueblo Colorado is another location that these Chili Peppers come from; both of which I try to buy online and have shipped (pre roasted). Dan can speak more to Hatch, NM. but I think you can only call the pepper a "Hatch Chili" if it originates in Hatch New Mexico, and many cultivars exist. However, I have ordered Hatch chili seeds from Hatch New Mexico farms, and have had moderate success at growing them within my garden by trying to create a growth area for them that is similar in soil ammendments that somewhat replicate their natural growing habitat. The only problem I run into is a shorter, hot, season, so I don't get quite the yield one might get .. say .. in New Zealand (smiles).

    You're most welcome :) They are all a work in progress but it seems like there's some activity in many of them so that's something I guess.

    I've not had much of this sort of food, to be honest I think my mouth may meltdown if I did :)

    I've seen some chili for sale here in NZ and while they may grow well in our North Island (because it's warmer up there), down here in the South Island
    I'm just not sure if we would get enough temp to do them justice.
