    Title: Coffee Pot Roast
    Categories: Beef, Crockpot, Vegetables, Potatoes
    Yield: 8 Servings

    6 Carrots; peeled, diced
    2 c Potatoes; peeled, diced
    3 lb Beef chuck roast
    Salt & pepper
    14 oz Can diced tomatoes
    1 c Black coffee
    1 c Water

    Put vegetables in cooker. Add beef, sprinkle with salt
    and pepper. Add tomatoes and liquids. Cover and cook on
    low 8 ~ 10 hours or until tender. If desired, thicken
    with flour and water base.

    Title: Muffin Tin Coffee Cake
    Categories: Cakes, Desserts, Snacks, Nuts
    Yield: 12 Cakes

    MMMMM--------------------------MUFFINS-------------------------------
    1 1/2 c Unbleached flour
    1/2 c Sugar In The Raw
    2 ts Baking powder
    1/2 ts Salt
    1/4 c Cold butter; in 4 pieces
    1/2 c Milk
    1 lg Egg

    MMMMM--------------------------FILLING-------------------------------
    1/4 c Sugar In The Raw
    1/4 c Chopped walnuts
    1 tb Softened butter
    1 tb All-purpose flour
    1 ts Ground cinnamon

    MMMMM---------------------------GLAZE--------------------------------
    1 c Powdered sugar; sifted
    1 1/2 tb Milk
    1/2 ts Vanilla extract

    Set oven @ 375+|F/190+|C

    Stir together the dry ingredients. Cut in butter with a
    pastry blender or two knives until mixture is crumbly. In
    a separate bowl, combine the milk and egg. Stir into flour
    mixture until just combined. Mixture will resemble a soft
    dough.

    In a small bowl, combine filling ingredients. Using half
    the batter, spoon into 12 greased muffin cups. Sprinkle
    with filling and top with remaining batter. Bake for
    20 to 25 minutes or until knife inserted in the center
    comes out dry.

    Make the glaze by combining all ingredients and stirring
    well. Apply however you like. Yields 1/2 cup glaze.

    Title: Chocolate Coffee
    Categories: Beverages, Chocolate, Dairy
    Yield: 12 Servings

    1 c Sugar
    1 c Baking cocoa
    1 c Boiling water
    1 ts Vanilla extract
    1/4 ts Salt
    4 c Heavy whipping cream; whip'd
    8 c Hot strong brewed coffee

    In a large heavy saucepan, whisk the sugar, cocoa and
    water until smooth. Cook and whisk over medium-low heat
    until mixture forms soft peaks when whisk is lifted and
    resembles thick hot fudge sauce, about 35 minutes.

    Remove from the heat; stir in vanilla and salt. Transfer
    to a bowl; refrigerate for at least 2 hours.

    Beat the chocolate mixture. Add 2 cups whipped cream;
    mix well. Fold in remaining whipped cream. For each
    serving, place about 1/2 cup chocolate cream in 2/3
    cup coffee or milk; stir to blend.

    Yield: 12 servings.

    Title: Cold-Brewed Coffee
    Categories: Five, Beverages
    Yield: 6 Servings

    1/2 lb Coarse ground coffee beans
    4 1/2 c Cold water
    Cheesecloth
    Coffee filters

    Put coffee grounds in a large container. Slowly pour
    water over the grounds.

    Cover bowl with plastic wrap and steep at room temp
    for 18 to 24 hours.

    Line a strainer with several layers of cheesecloth
    and place atop a pitcher; strain coffee through the
    cheesecloth into the pitcher. Discard the grounds.
    To get a clearer brew, strain coffee again through
    coffee filters. Store in refrigerator.

    Title: Irish Coffee
    Categories: Five, Beverages, Dairy, Booze
    Yield: 1 Serving

    2 tb Double cream
    150 ml Fresh brewed black coffee
    50 ml Irish whiskey
    1 ts Brown sugar
    pn Freshly grated nutmeg

    Lightly whip the cream just so itgCOs very slightly
    thickened, then set aside.

    Pour the hot coffee into a mug or heatproof glass,
    then add the whiskey and sugar. Stir until the sugar
    has dissolved. Gently float the cream on the top and
    sprinkle the nutmeg over the cream. Serve hot.
