    Title: Cheeseburger Mini Muffins
    Categories: Beef, Cheese, Condiments, Bread
    Yield: 60 servings

    1/2 lb Ground beef
    1 sm Onion; fine chopped
    2 1/2 c A-P flour
    1 tb Sugar
    2 ts Baking powder
    1 ts Salt
    3/4 c Ketchup
    3/4 c Milk
    1/2 c Butter; melted
    2 lg Eggs
    1 ts Prepared mustard
    2 c Shredded cheddar cheese

    In a large skillet, cook beef and onion over medium heat
    until meat is no longer pink; drain.

    In a small bowl, combine the flour, sugar, baking powder
    and salt. In another bowl, combine the ketchup, milk,
    butter, eggs and mustard; stir into the dry ingredients
    just until moistened. Fold in the beef mixture and
    cheese.

    Fill greased miniature muffin cups three-fourths full.
    Bake @ 425ºF/218ºC until a toothpick comes out clean,
    15-18 minutes. Cool for 5 minutes before removing from
    pans to wire racks. Serve warm. Refrigerate leftovers.

    Title: Breakfast Egg Muffins
    Categories: Pork, Vegetables, Cheese
    Yield: 12 servings

    1/2 lb Pork sausage
    12 lg Eggs
    1/2 c Chopped onion
    1/4 c Chopped green pepper
    1/2 ts Salt
    1/4 ts Garlic powder
    1/4 ts Pepper
    1/2 c Shredded cheddar cheese

    Set oven @ 350ºF/175ºC.

    In a large skillet, cook sausage over medium heat until
    no longer pink, breaking it into crumbles; drain.

    In a large bowl, beat eggs. Add onion, green pepper,
    salt, garlic powder and pepper. Stir in sausage and
    cheese.

    Spoon by 1/3 cupfuls into greased muffin cups. Bake
    until a knife inserted in the center comes out clean,
    20-25 minutes.
