    Finally got you all back. Have had my new node number for some time now, but do to issues up stream I wasn't getting ANY of my echoes until today. So good to be back.

    Amish Breakfast Casserole

    RecipeIngredients
    6 large eggs, beaten
    1 medium white onion, diced
    4 cup frozen diced potatoes, thawed
    2 cup shredded cheddar cheese
    1.25 cup monterey jack cheese
    1.5 cup large curd cottage cheese
    1 lb pork sausage
    2 tsp dried parsley
    salt and pepper

    1. Preheat oven to 350F
    2. Grease a 9x13 baking dish.
    3. In a skillet on medium high heat, brown sausage and onion
    until no longer pink, breaking meat up into small pieces.
    4. Drain well.
    5. In a large bowl whisk eggs.
    6. Add potatoes, 3 cheeses, sausage mixture, salt and pepper.
    7. Mix well.
    8. Transfer to baking dish.
    9. Sprinkle with parsley.
    10. Bake for 40-50 minutes until toothpick in center comes out clean. 11. Let sit 10 minutes before cutting.

    Title: Amish Style Chicken & Corn Soup
    Categories: Diabetic, Poultry, Vegetables, Crockpot, Soups
    Yield: 8 Servings

    1/2 Stewing hen or fowl;
    2 qt Chicken stock or broth
    1/4 c Onion; coarsely chopped
    1/2 c Carrots; coarsely chopped
    1/2 c Celery; coarsely chopped;
    1 ts Saffron threads; (optional)
    3/4 c Corn kernels; (fresh/frozen)
    1/2 c Celery; finely chopped
    1 tb Parsley; fresh chopped
    1 c Egg noddles; cooked

    Combine stewing hen with chicken stock, coarsely chopped onions,
    carrots, celery, and saffron threads. Bring the stock to a simmer.
    Simmer for about 1 hour, skimming the surface as necessary.Remove and
    reserve the stewing hen until cool enough to handle; then pick the
    meat from the bones. Cut into neat little pieces. Strain the saffron
    broth through a fine sieve. (Note: The soup can be made through this
    step in advance. Simply frefrigerate broth and diced chicken meat for
    2 to 3 days, or freeze the broth and the chicken meat in separate
    convenienly sized containers. Be sure to label and date them. To
    use, defrost, remove congealed fat, return the broth full boil, and
    add the diced meat. Continue with recipe.) Add the corn, celery,
    parsley, and cooked noodles to the broth. Return the soup to a simmer
    and serve immediately.
